A Chinese salad recipe – quick, easy and very filling!

Ingredients
1 tablespoon of soy sauce
1/2 teaspoon of salt + 1/2 tea spoon of sugar
2 tablespoons of sesame oil or flaxseed oil, or olive oil
2 red peppers
two handfuls of coriander
100gr roasted peanuts or cashew nuts
a tablespoon of roasted sesame seeds
or a teaspoon of sesame tahini (optional)
Directions
- Once deseeded chop your peppers into small pieces, then put them in a salad bowl. Add the soy sauce, sugar, salt, oil, nuts & sesame seeds or tahini.
- Chop the coriander up and add to the bowl.
- Crush the nuts. I used a chopper to speed the process up.
- Mix all of the ingredients well. Serve & enjoy!
